Description

These creamy overnight oats are made with coconut milk and chia seeds for a rich texture. Choose between Pumpkin Spice, Apple Cinnamon, or Banana Walnut mix-ins.

Main Ingredients

  • 1/2 cup oats
  • 1/2 cup coconut milk (canned)
  • 1/4 cup plain milk (cow, almond, soy, etc. )
  • 12 tablespoons maple syrup (according to taste)
  • 11/2 teaspoons chia seeds
  • 1/2 teaspoon vanilla extract
  • pinch of salt

Pumpkin Spice

  • 1/4 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • whipped cream (optional, for serving)

Apple Cinnamon

  • 1/4 cup apple sauce
  • 11/2 teaspoons cinnamon
  • 1/2 small apple, chopped (add just before serving)

Banana Walnut

  • 1 ripe banana, mashed
  • 2 tablespoons walnuts, chopped
  • 1 teaspoon cinnamon
  • 1/2 small banana, sliced (add just before serving)

Instructions

  1. Stir together all ingredients in a jar or bowl.
  2. Cover and refrigerate for at least 4 hours, but ideally overnight before eating.
  3. Top with freshly chopped fruit, whipped cream, or nuts and a sprinkle of cinnamon and serve.

Notes

This recipe yields just over one cup of oats for 2 small servings or one large serving. One 13.5 ounce can of coconut milk provides 1.5 cups of milk, enough to triple the recipe.
