Ingredients
- 3 tbsp lemon juice
- 4 tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 2 tbsp each chopped basil and mint
- 4 cups chopped cucumber
- 1–1/2 cups fresh sweet corn kernels (about 2 ears)
Instructions
- In a large bowl, mix lemon juice, olive oil, salt, pepper, basil, and mint.
- Add in cucumber and corn and mix to combine. Season to taste with more salt and pepper if needed.
- Cover and refrigerate for an hour or more.
