Description
A simple sheet pan dinner brimming with smoked sausage, potatoes, cabbage, and broccoli. Mustard vinaigrette adds an additional element of flavor.

Sheet Pan Dinner
- 1 pound baby potatoes (i used red, yukon gold, and purple)
- 1 small head broccoli
- 1/4 head cabbage
- 3 tablespoons olive oil
- 1/4 teaspoon salt
- fresh ground pepper
- 12 ounces smoked sausage (kielbasa)
Vinaigrette
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon course mustard
- 1 clove garlic, minced
- 1/4 teaspoon salt
- fresh ground pepper
- drizzle of honey
Instructions
- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil.
- Cut baby potatoes into 1/4″ thick rounds. Scatter on sheet pan. Cut off broccoli florets and place in pan. Drizzle most of olive oil onto potatoes and broccoli and toss to coat.
- Cut cabbage into 1″ wedges and place on pan. Drizzle with remaining olive oil. Sprinkle the potatoes and veggies with salt and a few cracks of freshly ground pepper.
- Bake for 20 minutes or until potatoes are just about done.
- While the veggies are baking, cut smoked sausage into 1/4″ rounds and set aside.
- Meanwhile, prepare the vinaigrette by whisking together the olive oil, red wine vinegar, mustard, minced garlic, salt, freshly cracked pepper and honey. Set aside.
- When the 20 minutes are up on the veggies (potatoes should be tender but not scorched) add the smoked sausage rounds and cook for another 5-10 minutes, flipping halfway though if desired.
- Serve immediately with prepared mustard vinaigrette.
