Stuffed Pepper Jack-O-Lanterns

Description

Stuffed Peppers are a delicious, healthy dinner that’s easy to prepare. We’ve carved our peppers up like Jack-O-Lanterns for a fun Halloween twist on this warming meal.

Ingredients

  • 4 orange bell peppers
  • 1 pound ground beef
  • 11/2 cups diced onion
  • 3/4 cup tomato sauce
  • 8 oz whole kernel corn, drained
  • 2 tsp chili powder
  • 1/2 tsp salt
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350° F. Bring a large pot of water to boil.
  2. Meanwhile, cut the tops off of the peppers and set aside. Remove the seeds from each pepper and discard.
  3. Carve out little jack-o-lantern faces on one side of the peppers, such as triangles for eyes and noses, and a creepy smile.
  4. Cook the peppers in the boiling water for 5 minutes then drain peppers and set aside.
  5. In a large skillet, cook ground beef and onion until the beef is browned, stirring often. Remove from heat.
  6. Stir in tomato sauce, corn, chili powder, and salt.
  7. Stuff peppers with meat mix, place the pepper tops back on and place in a baking dish and bake for about 15 minutes.
  8. Remove pepper tops and sprinkle with cheese, then bake another 5 minutes until cheese is bubbly.
