Ingredients
- 2 tablespoons sesame oil
- 6 green onions, sliced, white and green parts divided
- ½ cup red onion, diced
- 4 cloves garlic, minced
- 10 to 12 ounces ground pork
- 1 teaspoons freshly grated ginger
- 8 ounces water chestnuts, chopped
- 1 tablespoon sriracha
- 15 ounces coleslaw mix
- 3 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
Optional Sriracha Mayo Sauce
- ¼ cup mayo
- 1–2 tablespoons sriracha
Instructions
- In a large skillet or wok, heat sesame oil over medium heat.
- Add the white parts of green onions and the red onion and cook, stirring frequently until the red onions soften.
- Add garlic, ground pork, grated ginger, water chestnuts, and sriracha and cook until the pork is browned.
- Add coleslaw, soy sauce, and rice wine vinegar and stir until combined. Cook, stirring occasionally, for 5 minutes, or until cabbage is tender.
- Meanwhile, whisk together mayo and sriracha in a small bowl.
- Serve Egg Roll in a Bowl drizzled with Sriracha Mayo Sauce and sprinkled with the green parts of the sliced green onion.
