An easy Asian-inspired dish featuring coleslaw mix, chopped veggies, ground pork and the perfect seasonings for a savory low carb meal you’ll want to eat on repeat.

Ingredients

  • 2 tablespoons sesame oil
  • 6 green onions, sliced, white and green parts divided
  • ½ cup red onion, diced
  • 4 cloves garlic, minced
  • 10 to 12 ounces ground pork
  • 1 teaspoons freshly grated ginger
  • 8 ounces water chestnuts, chopped
  • 1 tablespoon sriracha
  • 15 ounces coleslaw mix
  • 3 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar

Optional Sriracha Mayo Sauce

  • ¼ cup mayo
  • 12 tablespoons sriracha

Instructions

  1. In a large skillet or wok, heat sesame oil over medium heat.
  2. Add the white parts of green onions and the red onion and cook, stirring frequently until the red onions soften.
  3. Add garlic, ground pork, grated ginger, water chestnuts, and sriracha and cook until the pork is browned.
  4. Add coleslaw, soy sauce, and rice wine vinegar and stir until combined. Cook, stirring occasionally, for 5 minutes, or until cabbage is tender.
  5. Meanwhile, whisk together mayo and sriracha in a small bowl.
  6. Serve Egg Roll in a Bowl drizzled with Sriracha Mayo Sauce and sprinkled with the green parts of the sliced green onion.
