Description

These Healthy Cookie Dough Energy Bites are made with whole, clean foods and have the texture of cookie dough with a rich, slightly sweet flavor.

Ingredients

  • 1/2 cup cashew butter*
  • 2 tablespoons maple syrup**
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 2 tablespoons coconut flour

Instructions

  1. In a bowl, mix together cashew butter, maple syrup, vanilla extract, salt, and cinnamon.
  2. Add coconut flour and mix well.
  3. Allow to rest for a few minutes in the refrigerator to firm up.
  4. Roll into about 12 one-inch balls and serve.
  5. Store, covered, in the refrigerator for up to 5 days.

Notes

  • (*) Cashew butter may be swapped for another nut butter, such as peanut butter.
  • (**) Maple syrup may be swapped for another liquid sweetener, such as agave or honey.
