These Healthy Cookie Dough Energy Bites are made with whole, clean foods and have the texture of cookie dough with a rich, slightly sweet flavor.

Ingredients
- 1/2 cup cashew butter*
- 2 tablespoons maple syrup**
- 2 teaspoons vanilla extract
- 1/8 teaspoon salt
- 1/4 teaspoon cinnamon
- 2 tablespoons coconut flour
Instructions
- In a bowl, mix together cashew butter, maple syrup, vanilla extract, salt, and cinnamon.
- Add coconut flour and mix well.
- Allow to rest for a few minutes in the refrigerator to firm up.
- Roll into about 12 one-inch balls and serve.
- Store, covered, in the refrigerator for up to 5 days.
Notes
- (*) Cashew butter may be swapped for another nut butter, such as peanut butter.
- (**) Maple syrup may be swapped for another liquid sweetener, such as agave or honey.
