Ground chicken and veggies cooked in a savory Asian sauce, served in iceberg lettuce wraps.

Ingredients
- 2 tbsp olive oil
- 1 pound ground chicken or turkey
- ΒΌ cup chopped onion
- 1 cup diced carrot
- 2 tbsp hoisin sauce
- 4 tsp lime juice
- 4 tbsp reduced sodium soy sauce
- 1 head iceberg lettuce
- 2 tablespoons chopped peanuts
- Thinly sliced green onions for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Add ground chicken, onion, and carrot and cook for 10 minutes until the chicken is cooked through and the carrots are tender, breaking up the meat with a spatula.
- Add in the hoisin, lime juice, and soy sauce and stir to combine. Remove from heat and sprinkle with chopped peanuts and green onions.
- Separate the lettuce leaves and serve, filled with the meat and veggies.
