Description

This magical linguine dish cooks sauce and pasta in a single pot in less than 20 minutes for a flavorful pasta with a hint of heat.

Scale

Ingredients

  • 12 oz linguine
  • 12 oz cherry tomatoes, halved or quartered
  • 1 onion, thinly sliced (about 2 cups)
  • 4 cloves garlic, thinly sliced
  • ½ tsp red pepper flakes
  • 2 sprigs basil, plus more for garnish
  • 2 tbsp extra virgin olive oil, plus more for serving
  • Coarse salt
  • Freshly ground pepper
  • 41/2 cups water
  • Freshly grated parmesan cheese for serving

Instructions

  1. In a large, straight-sided skillet add linguine and lay it flat. Add in tomatoes, onion, garlic, red pepper flakes, basil, olive oil, 2 tsp. coarse salt, and ¼ tsp. pepper. Pour water over ingredients.
  2. Bring to a boil over high heat and boil mixture, stirring pasta with tongs or a fork frequently, until the linguine is cooked to al dente and the water is mostly evaporated, about 9 minutes.
  3. Remove from heat and season to taste with salt and pepper. Serve, garnished with torn basil leaves and freshly grated parmesan cheese.
