- 2 lbs bonesless pork shoulder
- 3 cups broccoli florets
- 4 carrots, julienned
- 4 stalks celery, diced
- 1 cup snow peas
- 1 can (about five ounces) sliced water chestnuts, drained
- 1 lb lo mein noodles (or spaghetti)
- 2 green onions, cut into thin slices
Sauce
- 2/3 cup reduced sodium soy sauce
- 6 cloves garlic, minced
- 4 tablespoons brown sugar
- 2 tablespoons samba oelek (chili paste)
- 2 tablespoons oyster sauce
- 2 tablespoons grated fresh ginger
- 2 teaspoons sesame oil
Instructions
- In your slow cooker, whisk together soy sauce, garlic, brown sugar, samba oelek, oyster sauce, ginger, and sesame oil.
- Add pork shoulder and cover and cook on low heat for 7 to 8 hours or on high for 3 to 4 hours.
- Remove pork from the slow cooker and shred the meat on a large plate or platter. Return meat and juices to the slow cooker.
- Add in broccoli, carrots, celery, snow peas, and water chestnuts and toss to combine.
- Cover and cook on high heat for 15 to 20 minutes or until veggies are tender.
- Meanwhile, cook pasta according to directions and drain well.
- Serve pasta topped with pork and veggie mix. Sprinkle green onion on top.
