SLOW COOKER LO MEIN

Slow cooker meals are a staple in our house, delivering those rich flavor profiles you get from hours of cooking but without requiring too much attention -perfect if you work full time like me.

You can even do some prep work the night before by washing and chopping your veggies then storing in the refrigerator over night.  You could even mix the sauce ahead of time, so all you have to do is pour it in your slow cooker in the morning.

At the end of the day, when the meat is done cooking, simply remove it to a big platter to cool, then shred. Meanwhile, bring a pot of water to a boil.  Add the meat with juices, along with those chopped vegetables, back to the slow cooker.  Cover and cook on high for 15 to 20 minutes or until the veggies are tender.  Your water should be boiling and ready to add pasta by that point. Add the pasta and cook according to the directions on the package.

Your pasta and veggies should be done around the same time.  Then dish out the pasta and top with veggies, meat, and sauce.  Garnish with freshly sliced green onion and dig in!  A note on the pasta.  I used lo mein noodles, which were easy to find in the asian foods section of my local grocery store, along with the sauce ingredients like soy sauce, sesame oil and samba oelek. If you can’t find lo mein noodles, try using spaghetti noodles instead!

Main Ingredients

  • 2 lbs bonesless pork shoulder
  • 3 cups broccoli florets
  • 4 carrots, julienned
  • 4 stalks celery, diced
  • 1 cup snow peas
  • 1 can (about five ounces) sliced water chestnuts, drained
  • 1 lb lo mein noodles (or spaghetti)
  • 2 green onions, cut into thin slices

Sauce

  • 2/3 cup reduced sodium soy sauce
  • 6 cloves garlic, minced
  • 4 tablespoons brown sugar
  • 2 tablespoons samba oelek (chili paste)
  • 2 tablespoons oyster sauce
  • 2 tablespoons grated fresh ginger
  • 2 teaspoons sesame oil

Instructions

  1. In your slow cooker, whisk together soy sauce, garlic, brown sugar, samba oelek, oyster sauce, ginger, and sesame oil.
  2. Add pork shoulder and cover and cook on low heat for 7 to 8 hours or on high for 3 to 4 hours.
  3. Remove pork from the slow cooker and shred the meat on a large plate or platter. Return meat and juices to the slow cooker.
  4. Add in broccoli, carrots, celery, snow peas, and water chestnuts and toss to combine.
  5. Cover and cook on high heat for 15 to 20 minutes or until veggies are tender.
  6. Meanwhile, cook pasta according to directions and drain well.
  7. Serve pasta topped with pork and veggie mix. Sprinkle green onion on top.
