CLEANED UP CHOCOLATE PEANUT BUTTER EGGS

It’s no secret that chocolate and peanut butter were made for each other.  Chocolate Peanut Butter No Bakes are a family favorite, as are Peanut Butter Buckeyes.  Most Halloweens I don’t even bother buying any other candy besides those beautiful golden-foil-wrapped Peanut Butter Cups.

So when it came time to dream up a fun Easter treat for my family, I immediately thought of Chocolate Peanut Butter Eggs.  These eggs, though, are a slightly healthier version, featuring maple syrup, coconut oil, cocoa powder, vanilla, and, of course, peanut butter!

That’s it! Five basic ingredients and about fifteen minutes will yield a dozen delectable Chocolate Peanut Butter Eggs, which have earned high ratings among my family.

Oh, and in case you don’t already have a silicone egg-shaped mold, this is the one I used. It comes as a two pack and is available for super-fast delivery through Amazon Prime.

HEALTHY CHOCOLATE PEANUT BUTTER EGGS

Description

These creamy Chocolate Peanut Butter Eggs are an easier, healthier version of a classic Easter treat.

Ingredients

Chocolate Layer

  • 5 tablespoons solid coconut oil
  • 2/3 cup creamy peanut butter
  • 2 teaspoons vanilla extract
  • 6 tablespoons cocoa powder
  • 4 tablespoons pure maple syrup

Peanut Butter Layer

  • 4 tablespoons solid coconut oil
  • 2/3 cup creamy peanut butter
  • 2 teaspoons vanilla extract
  • 4 tablespoons pure maple syrup
  • pinch of salt

Instructions

  1. Melt the coconut oil for both layers in a small sauce pot over low heat until liquid.
  2. In a medium bowl, mix together all chocolate layer ingredients including 5 tablespoons of the melted coconut oil.
  3. In a second bowl, mix together all peanut butter layer ingredients including the remaining 4 tablespoons melted coconut oil.
  4. In a silicone egg-shaped mold, spoon chocolate (or peanut butter) mixture into each mold, only going halfway full.
  5. Gently shake and tap the mold to smooth out the first layer, then add the opposite layer on top, filling mold to the rim. Each egg should be filled halfway with the chocolate mixture and halfway with the peanut butter mixture.
  6. Place the filled silicone egg trays in the freezer to firm up for 30 minutes, then serve.

Notes

Store eggs in the refrigerator or freezer, as they will become soft at room temperature.
