This Cheesy Parmesan Chicken has quickly become one of my go-to recipes for busy weeknights when I don’t want to have to worry about fussy recipes or anything remotely labor intensive. It’s a simple recipe with just three ingredients: chicken breasts, mayonnaise, and parmesan cheese.
Curiously, the limited combination of ingredients makes for tender, flavorful chicken, which could easily be gussied up with the seasoning of your choice. A few of my favorites are herbs de Provence, Cajun seasoning, and Italian seasoning.
When I make this meal I like to use the precut (raw) chicken tenders from the butcher instead of the full-sized chicken breasts because it takes less time for the meat to cook through and I think it bakes a bit more evenly.
Of course, I’m telling you this while my photos clearly show the big ol’ chicken breasts. It’s all I had on hand that day! Honestly! Either way, they will taste great.
If you’re looking for equally easy sides to serve with this meal, I recommend couscous and my all-time favorite, roasted carrots. For the carrots, simply cut into pieces, place on a baking dish or sheet pan, and toss with a few tablespoons of olive oil and salt and pepper to taste. Bake for about 30-40 minutes at 400 degrees, or whatever temperature the oven happens to be at for the main dish.

Easy, flavorful baked chicken with mayonnaise and grated parmesan cheese. Add your favorite seasonings for a bit of flair.
Ingredients
4 boneless, skinless chicken breasts
1/2 cup mayonnaise
1/2 cup parmesan cheese, fresh shredded
salt and pepper
Instructions
- Preheat the oven to 375 degrees.
- Salt and pepper the chicken breasts and lay in a baking dish.
- In a small bowl mix together the mayo, parmesan cheese, and optional seasonings* if adding.
- Evenly coat chicken with mayo mixture and bake at 375 for 30 minutes or until the temperature reaches 160 degrees in the thickest part of the breast. If using tenders instead of breasts, reduce cooking time.
- Remove from oven and allow chicken to rest for about 10 minutes.
Notes
You can add about 1.5 teaspoons of herbs or seasonings of your choice to customize this dish.
