Stuffed Peppers are a delicious, healthy dinner that’s easy to prepare. We’ve carved our peppers up like Jack-O-Lanterns for a fun Halloween twist on this warming meal.
Pumpkin carving is one of the most iconic of Halloween traditions, so I absolutely love the idea of carving up other produce too. You’ve already seen my Shrunken Head Potatoes, which are made even more delicious by their avocado and sour cream dipping sauce. Those little potato heads would actually make a great addition to this meal: Stuffed Pepper Jack-O-Lanterns.
Perhaps even more adorably spooky are these orange bell peppers on which I carved out classic Jack-O-Lantern faces. Boo!
Now if you’re a rural grocery shopper you might be thinking about how hard it will be to track down orange bell peppers for this meal, so I’ll share my tip with you. You see, I live in an area where there is no Trader Joes for over an hour. Wait whhaaaat? Not only that, there is no Whole Foods or Farmer’s Market either! Yes, it’s true, I swear.
So, what did I do to obtain such obscure veg as orange bell peppers?? I went to Aldi’s and bought the pack of red, orange, and yellow peppers. Actually I bought three packs, because they were a steal at around $2.50 per pack.
The way I see it, someone will end up with a red carved pepper (let’s call it the Devil pepper…) or maybe someone will get a lucky yellow pepper (Oh! The Golden Pumpkin. So exciting!). And any extra peppers can be cut up for snacks, sautéed for an egg breakfast with a little somethin’ extra, or made into an early November chili dinner.

Description
Stuffed Peppers are a delicious, healthy dinner that’s easy to prepare. We’ve carved our peppers up like Jack-O-Lanterns for a fun Halloween twist on this warming meal.
Ingredients
- 4 orange bell peppers
- 1 pound ground beef
- 1–1/2 cups diced onion
- 3/4 cup tomato sauce
- 8 oz whole kernel corn, drained
- 2 tsp chili powder
- 1/2 tsp salt
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat oven to 350° F. Bring a large pot of water to boil.
- Meanwhile, cut the tops off of the peppers and set aside. Remove the seeds from each pepper and discard.
- Carve out little jack-o-lantern faces on one side of the peppers, such as triangles for eyes and noses, and a creepy smile.
- Cook the peppers in the boiling water for 5 minutes then drain peppers and set aside.
- In a large skillet, cook ground beef and onion until the beef is browned, stirring often. Remove from heat.
- Stir in tomato sauce, corn, chili powder, and salt.
- Stuff peppers with meat mix, place the pepper tops back on and place in a baking dish and bake for about 15 minutes.
- Remove pepper tops and sprinkle with cheese, then bake another 5 minutes until cheese is bubbly.
