APPLE WALNUT PUREE

Feeding your little one shouldn’t be complex. This recipe for Apple Walnut Puree is super easy and lends itself well to double or even triple batches.  The puree itself tastes fresh and slightly nutty.  Not overly sweet, like many fruit purees can be.

For this recipe I go big. Triple the ingredients and freeze the extra in silicone baking cups so that I can thaw out a single portion at a time.  I use a pasta pot with an insert like this one to steam the apples and walnuts, then puree them in a food processor.  Oh, and let’s not forget this little gem.  An “Apple Peeler, Corer, and Slicer” makes quick work of the dangerous task of peeling and coring apples.  Of course this old-timey device is not required to make delicious, wholesome apple purees, but I grew up with one of these bad boys and I can’t imagine life without one.  The name, however, leaves nothing to the imagination.  I wish there was a cooler term for it, like Apple Genie. Yes, I do believe I would buy an Apple Genie, and not just because it reminds me of an Appletini.

APPLE WALNUT PUREE

Description

A simple puree of steamed apples made tastier with the nutty flavor of walnuts.

Ingredients

  • 2 apples, peeled and cored
  • 1/4 cup walnut halves or pieces
  • dash of cinnamon

Instructions

  1. Place a steamer insert into a pot and fill with a few inches of water. Bring water to a boil.
  2. Add apples and walnuts and cover with a lid. Cook for 7 minutes or until apples are easily pierced with a fork.
  3. Allow apples so cool ever so slightly, before transferring them, along with the walnuts, to a food processor. Add cinnamon and 2 to 3 tablespoons of water from the pot. Puree until smooth.
  4. Allow to cool and then serve or refrigerate.

Notes

You could also divide the puree evenly into silicone baking cups and freeze on a sheet pan. Once frozen, pop the puree out of the baking cups and store them in a freezer bag in the freezer for up to 3 months.
