Perfect to make ahead, or for using leftover steamed broccoli or roasted chicken, this dish can even be made in steps to reduce the amount of time it takes to prepare dinner. For instance, you can cook off the broccoli and chicken in the morning and layer them in a baking dish. Then mix the sauce and assemble the remainder of the casserole while the oven is preheating at dinnertime.
We’ve always served Chicken Divan with rice on the side, which in my mind is the perfect combination. Another great option would be buttered noodles or even mashed cauliflower if you’re trying to up your nutrients.

Description
A cheesy chicken and broccoli casserole warmed with a touch of curry powder.
Ingredients
- 20 oz frozen broccoli
- 3 – 4 boneless chicken breasts
- 2 cans cream of chicken soup*
- 1 teaspoon lemon juice
- 1 cup mayonnaise
- 1 – 1/2 cups shredded cheddar cheese
- 1 teaspoon curry powder
- 1/2 cup soft bread crumbs
- 2 tablespoons melted butter
Instructions
- Preheat oven to 350 degrees.
- Lightly steam broccoli or cook in boiling water until thawed and barely tender. Drain and arrange on the bottom of a 9×13 rectangular baking dish.
- Cook chicken breasts by simmering in water in a pan over medium high heat.** Allow to cool slightly, then shred or cut into bite-sized chunks and sprinkle over the broccoli.
- Combine soup, mayonnaise, lemon juice and curry powder in a medium bowl and pour over chicken.
- Sprinkle cheese over the soup mixture.
- Toss together bread crumbs and melted butter and then sprinkle on top of the cheese.
- Bake for 25 minutes until golden and bubbling.
Notes
- *You can also use cream of mushroom soup, or one of each.
- **Alternatively, the chicken may be cooked according to your preferred method such as broiling or roasting.
