FLOURLESS FUDGE BROWNIES

If you’re in the mood for a decadent chocolate treat but trying to pick healthier foods, these Flourless Fudge Brownies deliver.  Now don’t get me wrong, I am not saying these dark chocolate treats are as healthy as say, spinach and wheatgrass, but if you are looking for a cleaned up version of a classic, look to these Flourless Brownies.

Without flour, these brownies are dense and intensely chocolatey, taking on the flavor of the chopped chocolate you add, so make sure to use a good quality chocolate!

FLOURLESS FUDGE BROWNIES

Description

A decadent dark chocolate treat made with coconut oil, coconut sugar, cocoa powder, and chocolate.


Scale

Ingredients

  • 6 tablespoons coconut oil (or butter)
  • 7 ounces good quality semi-sweet or dark chocolate, chopped or chips
  • 3/4 cup coconut sugar (or white sugar)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 tablespoons cocoa powder
  • 3 tablespoons arrowroot powder or corn starch
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350. Line an 8″ x 8″ baking pan with aluminum foil for easy removal and cleanup. Grease the foil and set pan aside.
  2. In a small sauce pot, heat coconut oil (or butter) and chopped chocolate over low heat until completely melted and smooth. Set aside to cool.
  3. In the bowl of a stand mixer fitted with a whisk attachment, or in a large bowl, beat together eggs, sugar, and vanilla. Add in cocoa powder, arrowroot (or cornstarch), and salt and whisk well to combine.
  4. Add in the cooled chocolate mixture and stir to combine. Pour into the prepared pan.
  5. Bake in preheated oven for 20-25 minutes or until a toothpick inserted into the center of the brownies comes out clean. Do not over bake!
  6. Allow to cool completely before lifting the foil out of the pan, removing the foil from the brownies, and then cutting into 16 squares.

Notes

Flourless Fudge Brownies may be kept for up to 5 days, and do well both in the fridge and in the freezer for longer periods of time.
