I’ve always had a high opinion of the future. For instance, even as a child I knew that one day vegetables would taste as good as chocolate (because that’s what scientists should be focusing their attention on, right?). As I’ve gotten older, I’ve come to appreciate the tastes and textures of veggies more, but cannot help but get excited over this Hidden Veggie Chocolate Smoothie that makes cauliflower, spinach, and avocado taste like a chocolate shake.
This Hidden Veggie Chocolate Smoothie tastes so good that even my toddler thinks it’s a legitimate milkshake and he’s long wised up to the fact that I am constantly trying to pull a fast one on him with vegetables.
Amazingly, this smoothie is sweetened mainly by sweet potatoes for an additional nutrient boost, although I must warm you, preparing this drink does take a bit of prep beforehand. I know what you are thinking, but stay with me here! Once you try this and taste how delicious it is and know how good it is for you, you will decide it’s totally worth it to steam off a batch of sweet potatoes the night before. Heck, take 30 (measly) minutes on a lazy Sunday afternoon and steam enough cauliflower and sweet potatoes for 3 month’s worth of this smoothie and you will be thanking me for being this insistent.

Description
Nutrient dense cauliflower, spinach, avocado, and sweet potato all blended together in a super delicious chocolate flavored smoothie.
Ingredients
- 1/2 cup sweet potato, cut into chunks (about 1/2 a sweet potato)*
- 1/2 cup cauliflower florets*
- 1 cup unsweetened almond milk
- 1/2 cup water
- 1 scoop chocolate or vanilla protein powder
- 1 handful spinach
- 1/4 of an avocado
- 3 tablespoons raw cacao powder
- 2 tablespoons almond or cashew butter
- 3 pitted dates
Instructions
- Several hours prior to making the smoothie, lightly steam the sweet potatoes and cauliflower, then drain well and spread out on a small sheet pan and put in the freezer until frozen. You can prepare extra like I do and keep the excess in gallon-sized freezer bags for the next several times you want to make this smoothie.
- Add all ingredients to a high powered blender or food processor starting with the liquids.
- Blend until smooth and enjoy!
Notes
To make things even easier, I buy bags of frozen cubed sweet potatoes and frozen cauliflower florets to steam and refreeze. Cooking these vegetables before putting them in your smoothie is better for health and digestion.
