The most important meal of the day is often neglected on busy weekdays, but I’ve found a way to streamline our family’s breakfasts into individual servings of portable, wholesome goodness with these delicious jars of overnight oats.
While I have tried many different flavor combinations over the years, from Chocolate Peanut Butter to Strawberries and Cream, I’m partial to these cozy, classically fall flavors I’ve rounded up for you today: Apple Cinnamon, Banana Walnut, and Pumpkin Spice.
If I had to pick a favorite it would probably be the Banana Walnut, and my son might agree. He’s been chowing down on overnight oats since he was just 10 months old and has never turned down a bowl.
This recipe combines two breakfast staples –oats and milk- into one nutrient-packed, deliciously creamy concoction. Add to that the fiber-rich super food, chia seeds, and you are on your way to a well-fueled body and mind ready to take on even the busiest of days.
For the most amazingly rich and creamy texture, I opted for coconut milk as my main liquid, although any unsweetened milk would do. Simply reduce the amount of liquid in this recipe by about 1/8 of a cup to account for the swap. As the mixture sits, the chia seeds and oats soak up the milk and flavorings to yield a thick, creamy, and textural bowl of oats.

Ingredients
Main Ingredients
- 1/2 cup oats
- 1/2 cup coconut milk (canned)
- 1/4 cup plain milk (cow, almond, soy, etc. )
- 1 – 2 tablespoons maple syrup (according to taste)
- 1 – 1/2 teaspoons chia seeds
- 1/2 teaspoon vanilla extract
- pinch of salt
Pumpkin Spice
- 1/4 cup pumpkin puree
- 1 teaspoon pumpkin pie spice
- whipped cream (optional, for serving)
Apple Cinnamon
- 1/4 cup apple sauce
- 1 – 1/2 teaspoons cinnamon
- 1/2 small apple, chopped (add just before serving)
Banana Walnut
- 1 ripe banana, mashed
- 2 tablespoons walnuts, chopped
- 1 teaspoon cinnamon
- 1/2 small banana, sliced (add just before serving)
Instructions
- Stir together all ingredients in a jar or bowl.
- Cover and refrigerate for at least 4 hours, but ideally overnight before eating.
- Top with freshly chopped fruit, whipped cream, or nuts and a sprinkle of cinnamon and serve.
Notes
This recipe yields just over one cup of oats for 2 small servings or one large serving. One 13.5 ounce can of coconut milk provides 1.5 cups of milk, enough to triple the recipe.
