This quick and easy Black Bean Soup, features a sour cream spiderweb for a spooky meal perfect for a fun Halloween dinner.
If you love potato soup, I think you’ll be a fan of this velvety smooth black bean soup. The black bean flavor is pretty mild, which makes it ideal for layering in flavor like I did with a bit of jalapeno and bell pepper for a hint of mild heat.
I love how quickly this soup comes together too. You chop a single onion, jalapeno, and bell pepper and sauté them over medium heat until soft. Then add in a minced clove of garlic and a teaspoon of cumin along with two cups of chicken stock and two cans of undrained black beans. The mixture will come to a boil and then simmer for just 10 minutes before being pureed in a blender or with an immersion blender.
At this point, your lovely black bean soup is ready so serve, only requiring a few extra minutes to transform it into a dish worthy of Halloween night. To do so, mix a cup of sour cream with a tablespoon of lime juice. Spoon this mixture into a pastry bag fitted with a small circle tip. Alternatively, you could simply spoon the sour cream mixture into a plastic baggie and snip off a small amount on the corner.
To create the web, simply ladle soup into individual serving bowls and draw three circles on the surface of the soup with the bag of sour cream. Next, take a toothpick and drag it across all three rings, from the center out, at a one inch interval. As you can see above, I didn’t settle on that method until after I snapped these pics. They still sorta look like webs, right??
Serve your creepy creation with shredded cheddar cheese on the side to sprinkle on after the initial oohs and ahhs of the spiderweb have given way to the mmms of delighted diners.

Description

Ingredients
- 1 green or yellow bell pepper, diced
- 1 medium onion, diced
- 1 jalapeno, diced
- 1 tbsp vegetable oil
- 1 tbsp minced garlic
- 1 tsp cumin
- 2 cups chicken broth
- 2 (15 oz) cans black beans with liquid
- 1 cup sour cream
- 2 tbsp lime juice
- Salt & Pepper
Instructions
- In a large pot over medium heat, heat oil. Add in bell pepper, onion, and jalapeno and cook for 5 minutes until softened. Add in garlic and cumin cook for one minute longer.
- Add in chicken broth and black beans in their liquid and bring to a boil, then reduce to a simmer. Simmer for 10 minutes.
- Meanwhile, mix sour cream and lime juice and spoon into a pastry bag fitted with a small round tip or a resealable plastic bag with one small cut in the corner.
- Remove soup from heat and puree until smooth in a blender or using an immersion blender. Season to taste with salt and pepper, then divide into 4 bowls.
- Using the bag filled with sour cream, draw three circle rings on top of the soup. Drag a toothpick across the rings from the center outward in 1-inch intervals to make the spiderweb.
Notes
Serve with a bowl of shredded cheddar cheese for sprinkling.
