This magical linguine dish cooks sauce and pasta in a single pot in less than 20 minutes for a flavorful pasta with a hint of heat.
The one thing that bothers me about making pasta for dinner is, well, cooking the pasta. I don’t know if it’s the stove, the pot, or if it’s just me but it takes a tall pot of pasta water at least 20 minutes to come to a sad, almost boil in my kitchen. Then when I add the pasta, it takes another 10 minutes to finally return to a boil. Suffice it to say, the package directions telling me to cook for 9 minutes never work out for me.
But then I discovered this dish. This magical one pot linguine is an old Martha Stewart recipe that is perfect in nearly every way. It is what I would call an authentic Italian pasta: Al dente pasta lightly coated in a velvety sauce made from olive oil, pasta starch, onions, garlic, and a few small tomatoes. The scant amount of crushed red pepper flakes are just enough to give the pasta some heat without making it spicy.
So, how do you make One Pot Linguine?
Just as you would imagine, you add all ingredients to a single, high sided sauté pan along with several cups of water. Make sure your linguine is lying flat during this step!
Next, turn on the heat and bring the pasta to a boil over high heat. Once boiling, let it go for around 10 minutes or until your pasta is al dente and the water is nearly evaporated.
That’s it! No need to drain. At this point just season to taste with more salt and pepper and serve with a generous helping of freshly grated parmesan cheese.
Can you substitute any ingredients in One Pot Linguine?
Personally, I think it’s perfect just the way it is. You might try it with spaghetti or fettuccini but I wouldn’t stray too far from the thickness of linguine noodles, as that might skew the cooking time, meaning the onions and tomatoes might not have time to soften.
However, if you’re up for it, I think this one pot pasta concept is ideal for experimentation. Just keep in mind that you might have to adjust the amount of water used as well as the veggies.
Can you add meat to this One Pot Linguine?
This was my husband’s first question and the answer is NO! Followed by an exaggerated eye roll. I personally don’t want to cook raw meat in with the rest of the ingredients during their short swim in boiling water. However, I’m thinking that to keep this a one pot dish, you could brown some Italian sausage or simmer some chicken in the same skillet prior to cooking the pasta. Then remove it to a plate and set aside while you prepare this One Pot Linguine according to the directions. When everything is cooked, toss the meat in with the pasta, top with even more parmesan cheese and serve.

Ingredients
- 12 oz linguine
- 12 oz cherry tomatoes, halved or quartered
- 1 onion, thinly sliced (about 2 cups)
- 4 cloves garlic, thinly sliced
- ½ tsp red pepper flakes
- 2 sprigs basil, plus more for garnish
- 2 tbsp extra virgin olive oil, plus more for serving
- Coarse salt
- Freshly ground pepper
- 4–1/2 cups water
- Freshly grated parmesan cheese for serving
Instructions
- In a large, straight-sided skillet add linguine and lay it flat. Add in tomatoes, onion, garlic, red pepper flakes, basil, olive oil, 2 tsp. coarse salt, and ¼ tsp. pepper. Pour water over ingredients.
- Bring to a boil over high heat and boil mixture, stirring pasta with tongs or a fork frequently, until the linguine is cooked to al dente and the water is mostly evaporated, about 9 minutes.
- Remove from heat and season to taste with salt and pepper. Serve, garnished with torn basil leaves and freshly grated parmesan cheese.
